Our ice wine journey begins in beautiful vineyards, where ripe grapes are carefully nurtured on the vines. The grapes are carefully selected and remain on the vines until the temperature drops below freezing to around 7 to 8 degrees below zero. This natural process creates a unique concentration of flavors and sugars in the grapes.

Once Mother Nature has worked her magic, it’s time to pick the frozen treasures. The grapes are hand-harvested early in the morning, when the cold air keeps the grapes firmly frozen. This careful hand-picking ensures that only the very best grapes are selected for ice wine production.

The frozen grapes are pressed with the utmost delicacy, extracting only the pure and concentrated sugary juices. The result is a lush and syrupy liquid.

The precious grape juices are slowly fermented to preserve the aromas and enhance the delicious sweetness. This delicate dance of fermentation takes several months and is essential for creating the distinct flavor profiles that ice wine is known for. After fermentation, the ice wine is lovingly transferred to oak or steel barrels, where it matures patiently and develops its complex character. The rich flavors blend into a harmonious symphony of honey, tropical fruits and a hint of flowers, making every sip an unforgettable experience.
